How to make Crispy Sesame Balls

Mix the dry ingredients
Add to a bowl 116g of all-purpose flour, 1 packet of vanilla, 1/2 teaspoon of baking powder, 1 tablespoon of rice flour, and 2 tablespoons of tapioca flour. Mix well until the mixture is fully combined.

Beat the eggs
In a new bowl, add 1 egg, 1 tablespoon of cooking oil, 28ml of water, 1/4 teaspoon of salt, 3 tablespoons of sugar, and 40g of white sesame seeds. Use a whisk to mix until the sugar is completely dissolved.

Mix the batter
Gradually add the dry mixture into the egg bowl, mixing well until the mixture forms a smooth and elastic dough.
Next, cover the bowl with plastic wrap and refrigerate for 1 hour.
Tip: If the dough is dry, you can add a little cooking oil. Avoid mixing a dry batter, as the fried balls will not be fluffy. -
Shaping
First, divide the dough into 4 equal parts, then roll them into cylindrical shapes about the length of a hand.
Next, cut each piece of dough into 4 small dough balls. Lightly press the dough to flatten it slightly, then fold the inner part of the dough outwards and pinch it together to form a round ball.
After that, coat it evenly with a layer of white sesame seeds. Then, roll the dough again to make it really round.
Tip:- To prevent the dough from drying out, remember to cover the remaining dough parts tightly when they are not in use!
- To have the dough puff up nicely when frying, don’t roll the dough too tightly!

Frying the cake
Put a pan of oil on the stove and heat on medium fire until the oil is slightly warm.
Then, add the cake to fry on a low-medium fire for about 2 minutes until the cake cracks.
When you see the cake crack, increase the heat to medium-high and continue frying until the outer layer is golden brown.
Note:- When adding the cake, the oil should not be boiling as it will cause the sesame coating on the outside of the cake to fall off.
- To check if the oil is hot enough, you can dip the end of a chopstick into the pan; if the oil bubbles slightly, it is ready.
