How to choose fresh ingredients
How to choose fresh chicken gizzards:
- Fresh chicken gizzards should look fresh, have a slightly dark color, and a distinctive aroma. Avoid using gizzards that are mushy, have a purplish color, or have an unusual smell.
- If buying pre-packaged gizzards, be sure to check the expiration date and the supplier. Products with faded or obscured expiration dates should not be purchased.
- You should buy chicken gizzards from reputable places like supermarkets or food stores to ensure freshness and quality.
How to choose fresh rambutan:
- Fresh rambutan usually has an attractive red-green color, with spiky outer skin that is crispy and firm, and the tips of the spikes can be green or bright red.
- Press your fingernail into the rambutan to test; the skin should be crispy without any signs of being soft or leaking. The flesh inside should be opaque white, juicy, and have a distinctive aroma.
- You should choose rambutan purchased in clusters still attached to the stem, preferably with fresh green leaves, indicating they have just been picked from the tree.

How to make Stir-fried Chicken Gizzards with Rambutan
-
Prepare chicken gizzards
After buying, you need to scrape off the yellow membrane and wash the chicken gizzards 2-3 times with cooking wine, vinegar, and salt to remove the odor.
Put the chicken gizzards into a pot of boiling water and boil for about 15 minutes with ginger and half a lemon (with peel). Season the boiling water with 1 teaspoon of seasoning, 1 teaspoon of salt, 1 teaspoon of sugar, and 2 teaspoons of cooking wine.
After boiling, rinse with cold water so that the chicken gizzards remain crispy, then cut each piece in half.
-
Preparation of rambutan and other ingredients
Peel the rambutan and remove the seeds to have 1kg of rambutan flesh; it’s best to peel them into larger pieces for a more appealing dish.
Peel the garlic, wash the tomatoes and onions, then cut them into wedges. Soak and clean the celery, then cut it into bite-sized pieces about 2 – 3 finger lengths.
-
Stir-fry chicken gizzard with rambutan
Prepare 1 bowl of seasoning consisting of 2.5 teaspoons of seasoning powder, 1.5 teaspoons of salt, and 1 teaspoon of sugar. You can increase the amount of sugar if your rambutan is too sour.
Heat 2 tablespoons of cooking oil in a pan over medium heat, sauté the garlic until fragrant, then add the chicken gizzard to stir-fry, continuously stirring to ensure the gizzard is cooked and not burnt.
Next, season the chicken gizzard with half of the prepared seasoning. When the gizzard has absorbed the seasoning, add the rambutan flesh and season with the remaining half of the seasoning.
-
Stir-fry the remaining ingredients
Dissolve a mixture of 2 tablespoons of tapioca starch, 1.5 tablespoons of apple cider vinegar with 100ml of water.
Gradually add the celery, tomatoes, and onions, continuing to stir evenly. When the celery and tomatoes are nearly cooked, pour the prepared tapioca starch mixture in, stirring quickly to prevent the starch from clumping.
At this step, you can adjust the seasoning to suit your and your family’s taste; when the dish is to your liking, turn off the heat and serve it on a plate to complete the dish.
Tip: You can use the juice from the rambutan fruit to mix with the tapioca starch instead of plain water to enhance the flavor and sweetness of the dish.
-
Final product
A plate of chicken gizzards stir-fried with rambutan is aromatic, with a perfect balance of sour, sweet, and salty flavors that are incredibly appetizing.
The dish has a refreshing taste, with the tender sweetness of rambutan blended with the chewy and crispy chicken gizzards, making it perfect for the hot summer weather.
You can dip the chicken gizzards in spicy chili fish sauce and enjoy them with white rice or crispy fried noodles for a delightful experience!
Tip: If you can’t find chicken gizzards, you can still use this recipe with chicken intestines, shrimp, or squid, all of which are very delicious!
