- Choose anchovies that are of moderate size, about 2 finger joints long, not too small, not too large.
- Fresh anchovies will have a transparent flesh, tightly closed mouth, and a fishy smell of the sea when smelled.
- Press your finger into the fish flesh; if it feels firm and elastic, then you should buy it.
- Do not choose anchovies that have flesh that has turned opaque white, has a foul smell, or any strange odor.

- You should choose to buy pork shoulder fat or pork neck fat, which will be tastier than fat from other parts.
- Choose pieces of pork fat that are opaque white, with bright color, and when pressed, they still have a certain degree of elasticity.
- Do not choose pieces of pork fat that have turned yellow or have an unusual smell.
How to make Spicy Anchovies

Prepare the ingredients
Remove the heads and tails of the anchovies, wash them clean, and let them drain. Rinse the pork fat with salt water, then wash it again with clean water before cutting it into small cubes.
Peel the shallots and garlic, remove the stems from the chilies, and wash everything clean. Finely chop the shallots, garlic, and chilies, and set them aside separately.
Clean the green onions by removing the damaged leaves and roots, then wash them. Cut the green onions into small pieces and place them in a bowl.
Tip: Only take the fat from the pork and remove the skin, as the pork skin can cause oil to splatter when frying, which is very dangerous.

Marinate the fish
Put the anchovies in a large bowl, add 3 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, and 1 tablespoon of cooking oil, then stir well for the fish to absorb the seasoning. Marinate the fish for about 15 minutes.

Put 1 tablespoon of cooking oil into a pot, heat the oil. Then add the fat, stir continuously, and cook for 5 – 10 minutes over medium heat.
When the crispy pork fat turns golden brown, turn off the heat and remove the crispy pork fat into a bowl.

Caramelize the sauce for braised fish
Add 2 tablespoons of cooking oil and 1 tablespoon of sugar to the pot, then keep the heat medium to let the sugar dissolve gradually.
When the sugar starts to dissolve, use chopsticks to stir until the sugar is completely dissolved, and continue to cook until the sugar turns a brown color resembling soy sauce.
