- The freshest mackerel fillets are those just freshly cut from newly caught mackerel at the seaports. The fish meat is firm, tightly bound together, not loose, and has a slight scent of the sea.
- If buying frozen mackerel fillets, you should choose those that are well-packaged and stored under appropriate cold conditions. And remember to check the expiration date and product information printed on the packaging to avoid purchasing low-quality goods!

Prepare ingredients
To eliminate the fishy smell of the fillet, after washing it clean, you should rub salt around the fillet and rinse it 2 – 3 times with water, then let it drain and cut into small pieces about 2 – 2.5 finger lengths.
Tip: To effectively remove the fishy smell from the fillet, you can use and wash the fillet with a few ingredients such as: salt, alcohol, vinegar,…Wash the tomatoes and cut them into small cubes. After peeling, wash and drain the shallots and garlic, then finely chop them.

Fry the fish fillet
Place a pan on the stove, add 50ml of cooking oil, heat on high until the oil is hot, then add the mackerel fillet and fry on medium heat for about 4 minutes until the fillet is cooked and golden brown on both sides, then remove it and let it drain.

Making mackerel fillet with tomato sauce
