How to choose fresh ripe mangoes
- You should choose mangoes with smooth, beautiful skin, without blemishes or damage.
- The mango should have a bright yellow color, uniform, taut skin, ripe, firm, and not bruised, feeling solid in hand.
- When selecting and checking the mango’s skin, look for fruits with tiny dots on the skin, smooth, and without any shriveled or wrinkled ends.
- You should avoid using green, unripe fruits that feel soft when touched.
Where to buy powdered milk?
- You can use baby powdered milk or any type of powdered milk you like!
- You can find powdered milk at supermarkets, milk stores, or on e-commerce websites as well.

How to make egg-free mango flan

Cook sugar to make caramel
Put a pot on the stove and add 4 tablespoons of sugar, then melt the sugar over medium heat.
When the sugar starts to melt, stir gently until the sugar is completely melted and turns a brown color, then turn off the heat and pour the caramel into the cake mold.

Prepare and blend the mango
Wash the mango, peel it, then cut it into small pieces and put it in a bowl.
Then, put the mango in the blender and blend until smooth.

Blend the sandwich
Take 5 slices of sandwich bread, use scissors to cut off the edges of the bread.
Then tear the sandwich slices into small pieces and put them in a blender, blend until fine.

Cook the mango mixture for flan
Add 250ml of unsweetened fresh milk, 6 tablespoons of sugar, and the pureed mango into a pot. Place the pot on the stove and stir well to combine the milk and mango.
Now prepare the egg milk mixture with 3 tablespoons of powdered milk and 60ml of water, stirring well.
Then add this mixture into the mango milk mixture, cooking over medium-low heat until the mango milk thickens.
Next, gently add the ground bread crumbs into the mango milk mixture a little at a time until all the bread crumbs are used. Stir gently and mix well to combine the bread crumbs with the mango mixture.
After 10 – 15 minutes, the mango mixture for flan will start to thicken slightly, forming a homogeneous mixture, then turn off the heat.

Pouring the mold and steaming the flan
Pour the mango mixture for the flan into the mold, on top of the caramel layer. Then cover the mold tightly with aluminum foil and place it in the steamer, steaming in a water bath over medium heat for 20 – 25 minutes.
After steaming, place the cake in the refrigerator for 2 – 3 hours before enjoying!

After chilling, remove the cake from the mold and place it on a plate to enjoy.
