Ingredients for Durian Flan For 20 pieces
Fresh durian flesh 100 gr Chicken eggs 5 pieces Sweetened fresh milk 500 ml Sugar 150 gr
How to choose ripe, delicious durians without being bitter
- Ripe, sweet durians will have a strong, pleasant aroma that spreads widely, and the exterior of the shell will show clear sections with high, prominent spikes.
- When choosing, you should hold the durian and shake it lightly, or use a durian opener to gently tap the body of the fruit. If the fruit produces a deep, dull sound, it means the flesh is firm and thick.
- It is advisable to choose durians with fresh stems, slightly green and firm; if you press your fingernail into it, you should feel a bit of wet sap.
- Avoid buying durians that lack fragrance or have a very faint smell, and those that are uniformly round without clear sections. When you tap on the shell, if you hear a hollow sound, it likely contains many seeds and will not taste good.

How to make Durian Flan
-
Blend the durian
The durian flesh is separated from the seeds, and you tear it into small pieces.
Then you put the durian flesh into a mortar and use a hand blender to blend until smooth.
-
Cook the milk and mix with eggs and durian
Crack 5 chicken eggs into a large bowl, beat them until the yolks and egg whites are well combined.
Pour 500ml of sweetened fresh milk into a pot along with 100gr of sugar, stirring well until the sugar is completely dissolved.
Next, place the pot of milk on the stove and heat it over medium heat until the milk is warm; when you see steam starting to rise from the surface, turn off the heat and remove the pot from the stove.
Slowly pour the warm milk into the beaten eggs while continuously stirring to prevent the eggs from curdling. Continue to add the finely blended durian flesh to the mixture, stirring well to combine all the ingredients.
-
Strain the egg, milk, and durian mixture
After stirring the sugar, milk, eggs, and durian together until well combined, pour the mixture through a sieve to remove any residue, resulting in a smooth, thick egg-durian milk mixture.
Let the mixture sit for about 10 minutes, then gently pour it slowly into another bowl to remove the sediment settled at the bottom.
-
Making caramel
Put a pot on the stove over medium heat, add the remaining 50g of sugar and 2 tablespoons of water.
Use a spoon to stir until the sugar dissolves completely, boil until the mixture bubbles, the sugar thickens and turns a brown color, then turn off the heat.
-
Pouring the mold and steaming flan cake
You place the flan mold in front, using a spoon to scoop a little thin caramel into each mold.
Gently pour the durian egg milk mixture into each mold, cover with a lid and place the flan molds into the steamer.
Put a pot of water on the stove over high heat to boil; when the water is boiling, place the steamer on top, cover the lid, and steam the flan for about 30 minutes.
After the steaming time, open the steamer lid and see that the surface of the cake has set, and the caramel at the bottom has melted evenly. Turn off the heat, lift the steamer out to let the cake cool slightly, then serve on a plate or store in the refrigerator!
Tip:
- To ensure the steamed cake is smooth and the cake does not have holes, after pouring the egg milk mixture into the mold, gently tap the mold on a flat surface to release all the air bubbles.
- To prevent steam from condensing on the pot lid and dripping onto the surface of the cake, when steaming flan, you must cover the mold or, better yet, place a thin cloth over the surface of the mold to prevent water from getting in.
- To avoid breaking the cake when flipping it out, you should wait for the cake to cool down a bit or place it in the fridge for 15 minutes to save time before flipping it out.

Final Product
Durian flan is soft and smooth, without any holes, melting instantly in your mouth. The cake has a sweet, light flavor, rich in egg, and an incredibly enticing durian aroma.
The cake is inverted onto a plate coated evenly with a sweet, slightly bitter caramel layer, beautifully brown and appealing. The flan tastes even better when served cold.
This is a simple dessert and snack that is easy to make and deliciously addictive, suitable for all family members.
