- You should choose squid with bright, shiny colors. The brown part will be dark brown, while the body of the squid will be opaque white like milk.
- When you touch the body of the squid, it should feel firm, have high elasticity, not leave an indentation, and quickly return to its original state.
- Additionally, fresh squid will have clear eyes, not bulging out or leaking fluid. The head and body should be tightly connected.
- Avoid buying squid with a soft, mushy body, lacking elasticity, where the head and body easily separate, with cloudy pupils and leaking yellow fluid, as these squids have been preserved for too long and are in the process of decomposing.
How to choose fresh pork
- You can buy pre-ground pork or buy pork to chop or grind yourself using a meat grinder.
- You should choose pork that is bright pink, has no strange odor, and has translucent white fat; avoid meat that is pale and has a foul smell.
- You can press the meat with your hand; if you observe that it bounces back immediately, does not leave an indentation, is dry, and does not stick to your hand, it indicates that this is good meat.
- Good pork should have uniform, firm fibers and should not leak fluid or be slimy.

Prepare the squid and ingredients
Clean the squid with water, remove the innards, squid teeth, backbone, and peel off the skin.
Then, to remove the fishy smell, rub the squid with diluted white wine for about 3 minutes, then rinse with clean water and let it drain.
Soak the wood ear mushrooms and vermicelli in water for about 30 minutes until soft, then rinse with water and chop finely.
Peel the shallots and garlic, then mince them.

Marinate the meat
Put 250g of minced pork, chopped wood ear mushrooms, and vermicelli in a bowl, marinate with 3 teaspoons of seasoning, and 2 teaspoons of pepper.
Add half of the chopped shallots and garlic, 1/2 tablespoon of fish sauce, and 2 teaspoons of sugar. Mix well and marinate for about 15 minutes to absorb the spices.

Stuff and steam the squid
Stuff the marinated meat mixture inside the cleaned squid, pack it tightly, and use 2 toothpicks to secure the opening.
Place a steaming pot on the stove, turn on high heat, add 1 liter of water and bring to a boil, place the squid in the steamer and set it over the pot.
Cover and steam on high heat for about 10 minutes for the filling to cook thoroughly.

Making fried squid with fish sauce
Put 3 tablespoons of fish sauce, 2 tablespoons of sugar, and 2 teaspoons of pepper into a bowl and mix well.
Heat a pan over medium heat, add 2 tablespoons of cooking oil, and sauté the remaining onion and garlic until golden and fragrant.
Next, pour the fish sauce and sugar mixture into the pan, lower the heat, wait for the sugar to dissolve completely, then add the steamed squid and fry on low heat for 5 minutes until the sauce thickens.
