Prepare the ingredients
First, wash the pork belly thoroughly with diluted salt water and let it drain, then cut it into bite-sized pieces.
How to clean pork belly without smell- To prevent the pork belly from smelling, before cooking, blanch the meat in boiling water for about 3 minutes with 1 crushed shallot; the shallot will help eliminate the smell effectively.
- Additionally, you can add a little white wine to the boiling water before removing the meat, as white wine will help remove any unpleasant odors from the meat effectively.
- After that, rinse the meat with cold water and then continue with the cooking process; the meat will no longer have an unpleasant smell, and the dish made from pork will be more delicious.

After cleaning, add 1 tablespoon of seasoning, 2 tablespoons of fish sauce, and 1/2 teaspoon of pepper to the meat and marinate for 20 minutes to let the meat absorb the spices.

Once the meat is browned, pour in coconut water until it just covers the surface of the meat. Braise the meat over high heat until the coconut water begins to boil, then skim off the foam, reduce the heat to low, and braise the meat for another 10 minutes. After that, add 2 tablespoons of fish sauce to the pot.
Place a pan on the stove and add 1 tablespoon of cooking oil to the pan. Wait for the oil to heat up, then add the pineapple and stir-fry for 3 minutes. After frying, add the pineapple to the pot of braised meat and stir gently.
Continue to braise over low heat until the braising liquid thickens. At this point, add another tablespoon of fish sauce and adjust the seasoning to taste before turning off the heat.
