After purchasing the frog, chop off the head, then peel the skin, remove the internal organs and blood vessels, rinse it briefly with water, then rub salt evenly over the frog meat, rinse with clean water, and let it drain.
Next, use scissors to cut the frog into small bite-sized pieces.

Marinate the Frog
Add the chopped frog along with minced shallots, 1 teaspoon of oyster sauce, 1/3 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, 3 teaspoons of pepper, 1/2 teaspoon of chili powder, 6 bird’s eye chilies, and 2 tablespoons of color sauce into the pan, then use chopsticks to mix and toss the ingredients together. Wash the green pepper and let it drain; keep 4 whole peppercorns and crush the remaining one in a bowl using a pestle.
Wash the yellow horn chili and slice it. Clean the ginger, peel it, and cut it into strips. Wash the shallots and chop them finely.

Marinate frog
After cleaning the frog, place it in a bowl with 1/2 of the sliced ginger, sliced chili, 1 tablespoon of salt, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, 1 teaspoon of fried garlic, 1 teaspoon of fried onion, 2 tablespoons of fish sauce, and 1 tablespoon of coconut color.
