How to choose fresh ingredients
How to choose fresh chicken intestines
- Fresh chicken intestines have a bright color, rosy, and do not have any dull spots or small specks on the surface.
- Choose chicken intestines that feel firm to the touch, not too soft and mushy, and not slimy.
- Do not buy chicken intestines if they smell strongly of fishy odor as this may indicate that they have been left for too long and are no longer usable.
How to choose fresh cabbage
- Fresh cabbage will have a shiny color, and a round shape. Do not buy those that are flat or oval-shaped as these are hollow and not firm.
- Choose cabbages that are slightly dark green in color; if they are purple, they should be deep purple, and choose those that feel heavy and firm.
- Avoid buying cabbages that have black-brown spots on the body or are bruised, as these are old and no longer crispy fresh.

-
Prepare the ingredients
Buy chicken gizzards, put them in a bowl and thoroughly massage with 1 tablespoon of salt. After that, rinse well and let drain.
Cut the chicken gizzards into bite-sized pieces, marinate with 1/2 tablespoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of pepper. Let it sit for about 20 minutes for the gizzards to absorb the seasonings.
Cut the cabbage into thin strips, rinse well, and let it drain. Wash the cilantro, let it drain, and then chop it finely.
How to clean chicken gizzards properly and without odor
- Gizzards: First, remove all the dirt and scrape off the adhering membrane. Then, rinse with water once and add white salt, massaging several times to clean the gizzards. Finally, rinse with water an additional 3 – 4 times.
- Chicken liver: Separate the liver, rinse it with water, and let it drain. If it is a large piece, you can cut it into bite-sized pieces.
- Chicken intestines: Identify both ends of the intestines, use chopsticks to pierce from one end, then slide the chopsticks along the length of the intestines until they come out the other end to push out all the waste inside, then rinse well.
