All-purpose flour 150 gr Peeled mung beans 100 gr Baking powder 1/2 teaspoon Dried coconut 2 fruits Salt 2/3 teaspoon Sugar 3 tablespoons Honey 1 tablespoon Chicken eggs 7 fruits
How to Choose Fresh Ingredients
How to choose fresh chicken eggs
- You can use your hand to feel the surface of the eggshell; if the surface is rough and slightly textured, it is fresh chicken eggs, while a smooth surface indicates that the eggs have been stored for a while.
- Hold the egg up to the light; if you see a small air chamber, the yolk is round, seems to be stationary, and is balanced in the middle of the egg, with a light orange or pink color, and the white is clear, then it is a new egg.
- Do not buy eggs that, when held to the light, show a large air chamber, the yolk is red, and is floating; these are old eggs.
How to choose delicious, buttery mung beans
- You should choose mung beans with beautiful yellow skins, glossy, and firm halves that have a fragrant smell.
- Mung beans with intact green skins, evenly shiny, and not infested with pests.
- Avoid buying mung beans with worm-eaten, broken, shriveled, or moldy seeds.
How to make Coconut Cake

Cooking mung beans
Rinse the mung beans briefly with water to remove dust. Place the mung beans in a large bowl, cover them with cold water and soak for about 1 hour to allow the beans to expand.
After soaking the beans for 1 hour, put the mung beans along with the soaking water into a pan with 1/3 teaspoon of salt, stir well, and cook over medium heat until the beans are cooked.
Once the beans are cooked, soft, and have absorbed all the water, use a spoon to mash the beans until slightly smooth. Add 2 tablespoons of sugar to the mung beans in the pan, and mix well until the sugar dissolves.
Continuously stir the mung beans over medium heat, cooking until the beans are chewy, then taste for sweetness to your liking before turning off the stove, and transfer the beans to a bowl to cool.

Making the batter
You crack 7 eggs into a bowl, beat them together with 1 tablespoon of sugar and 1/3 teaspoon of salt. Then, you add 300g of flour and 1/2 teaspoon of baking powder, mixing until the batter is smooth, then add 1 tablespoon of honey and 2 tablespoons of water, mixing well.
You stir continuously to ensure the batter combines evenly without clumping or becoming too thick. Cover the bowl with plastic wrap and let it rest for about 20 minutes.
-
Cooking the cake
You place a pan on medium heat, allowing it to get really hot, then reduce the heat, and brush a little cooking oil into the pan. Depending on the size of the pan, you scoop the batter and pour it into the pan while tilting the pan to spread the batter into a thin, even layer. After that, cover the pan for about 2 minutes to cook the cake.
After 2 minutes, open the lid to check if the batter is cooked, and if the edges of the cake are golden brown, use a thin knife to go around the edges and transfer the cake to a plate. Continue pouring the batter to cook the cakes until all the batter is used up.

Completion
The dried coconut you bought should be cut in half, and use a grater to scrape the coconut flesh into a bowl.
When eating, take a little mung bean into a piece of the coated dough, spread the mung bean evenly to cover the filling, then add the grated coconut in the middle. Finally, just take another piece of dough and place it on top, and our coconut cade cake is complete. You can use a knife to cut the cake into small bite-sized pieces and enjoy.
