How to choose fresh and delicious pork belly
- To buy good pork belly, you should choose pieces with a balanced amount of lean meat and fat.
- You should choose pieces with a layer of fat about 2/3 of a finger thick, with lean meat tightly attached to the layer of fat. However, be careful, to buy pork belly that is just right to eat, not too chewy, you should not choose pieces with a thick layer of fat and skin on the outside as that indicates the pig has been raised for a long time.
- Additionally, fresh pork belly will have a dry outer membrane, light red or bright pink color. When cut, the piece of meat has a bright pink color, white-pink skin, and is soft. The layer of fat interspersed with lean meat is bright and firm.

Prepare the ingredients
After buying the pork, rub it with a mixture of saltwater and diluted vinegar, then rinse it clean with cold water and let it dry.
Cut the pork into bite-sized pieces and place them into a large bowl.

When the shallots and garlic become aromatic, add the marinated meat into the pot and stir well to coat the meat evenly with the caramel. Once the meat is slightly seared, add 1 tablespoon of sweet chili sauce, 1 tablespoon of spicy chili sauce, and 1/2 tablespoon of oyster sauce to the meat, then stir well for the meat to absorb the seasonings.
Tip: At this step, if you like spicy food, you can add more chili sauce or 1 – 2 crushed bird’s eye chilies into the pot of meat!Cover the pot and braise the meat on the lowest heat for about 20 minutes.
