- When selecting pork ribs, you should choose ribs that are bright in color, with firm meat that has good elasticity and no unusual odor.
- To choose good ribs with a lot of meat, you should select those with small and flat bones. However, you should not choose ribs that are too small because they are likely from piglets, which will not taste good and may not ensure quality.

Prepare the ribs
After buying the ribs, wash them thoroughly, use a knife to chop them into small pieces, then rinse them once with diluted salt water and wash again with clean water.
Next, place a pot of water on the stove and wait for it to boil, add the ribs, blanch them for about 3 minutes over medium heat, then remove the ribs, rinse them with water, and let them drain.

Mix well and marinate for about 15 – 20 minutes for the ribs to absorb the spices evenly.

First, heat the pan, then add 1 teaspoon of cooking oil along with the remaining minced onion and garlic, sauté until fragrant, then add the marinated ribs. Stir-fry on high heat until the ribs are seared.
Next, add 100ml of water and stir well on high heat until the rib sauce comes to a boil. Lower the heat and continue cooking for about 10 minutes until the sauce thickens and the ribs turn a golden brown color, then adjust the seasoning to taste and turn off the heat.
