- Fresh bamboo shoots should have a rough shape, with evenly sized segments, not bent, crisp but tender, no yellow leaves, surface without spots, thin skin, and not wilted.
- Visually, bamboo shoots should have thin skin, be crispy, watery, fresh flavor, and a characteristic aroma.
- You should not choose bamboo shoots that are too white or have a yellow-brown color, sticky to the touch, and have striations, as these are not fresh and may be bleached.

Prepare the ingredients
Wash the bamboo shoots with water, then slice them into bite-sized pieces.
Boil 1 pot of water and add a little salt, then add the bamboo shoots and cook for about 45 minutes. While boiling, keep the lid open so that the toxins in the bamboo shoots can evaporate, then rinse with water and drain.

- Method 1: If you have time, cut the bamboo shoots into small pieces and soak them overnight. The next day, when cooking, just rinse them with clean water.
- Method 2: You can also boil the bamboo shoots in several rounds of boiling water, and when you taste them and find no bitterness left, rinse them with clean water and proceed to cook.
Peel the garlic, wash the chili, and then pound the garlic and chili together in a mortar until finely minced.

Place a pan on the stove, add 3 tablespoons of cooking oil, and wait for the oil to heat up before adding minced garlic and chili to sauté until fragrant.
