How to make Chocolate Shell Cakes – madeleine chocolat

Mix the egg and sugar mixture
You crack 1 egg into a bowl, then use a whisk to beat the egg until smooth. Next, add 60g of sugar, 1/4 teaspoon of salt, 1/2 teaspoon of vanilla extract, and mix the mixture for about 3 – 4 minutes until the eggs become frothy.

Mix the flour
You gradually add 55g of cake flour, 13g of cocoa powder, 1/2 teaspoon of baking powder, and 1/4 teaspoon of baking soda into a sieve, then sift the flour into the egg mixture.
Next, use a whisk to mix the mixture for about 3 – 4 minutes, add 75g of melted butter, and mix for another 5 – 6 minutes until you lift the whisk and the flour becomes thick and forms peaks.
Finally, cover the bowl of flour tightly with plastic wrap and place it in the refrigerator for about 30 minutes.

Pour into Molds and Bake
Spread a layer of butter on the madeleine molds and sprinkle a thin layer of cake flour evenly over the bottom of the molds, then invert the molds and gently tap to let the excess flour fall out.
Place the batter into a piping bag and carefully pipe the batter into the molds.
Note: Only add enough batter so that when baked, the cakes rise perfectly.Next, stabilize the oven temperature at 170 degrees Celsius for about 10 minutes. Then, place the molds in the oven at 170 degrees Celsius for 15 minutes to achieve the desired result.
