How to make Milk Puff Pastry

Mixing the dough for the pastry
Add salt to 200 grams of all-purpose flour.
Add yeast and 40 grams of sugar to unsweetened fresh milk.
Whisk 1 egg, then add 40 ml to the unsweetened fresh milk mixture above. The remaining part is used to brush the pastry before baking.
Mix the mixture well, then pour everything into the bowl containing the all-purpose flour.

Kneading the dough for the pastry
Knead the dough from before until it forms a cohesive mass.
Add another 20 grams of unsalted butter and knead until all ingredients are blended together.
Note:- When you first add the butter, the dough will be sticky. Don’t worry, just patiently knead until the dough is smooth and doesn’t stick to your hands.
- To check if the dough is ready, take a small pinch and flatten it, then use your hands to feel the stickiness. The dough should be elastic and not sticky to your hands.
Let the dough rise for 30 minutes to 2 hours depending on temperature and weather. When the dough has doubled in size, it’s ready.

Mixing the dough for the filling
Put 100 grams of all-purpose flour into a non-stick pan and toast evenly until the flour is fragrant.
Take 80 grams and grind it finely, melt 90 grams of unsalted butter. Then mix the sugar with the butter.
Continue to add powdered milk to the mixture above, followed by the toasted flour.
Mix well to create a dough with a high crumb texture.
Add raisins and then shape them into fist-sized pieces.

Making the cakes
Take the dough that has risen for nearly 2 hours and divide it into 6 equal parts.
Use a rolling pin to flatten the dough, then place the filling on top and roll it up.

Baking the cakes
Preheat the air fryer for 5 minutes.
Place all the cakes into the fryer, brush a layer of egg over the dough, set the temperature to 140 degrees Celsius and the time to 10 minutes.
After 10 minutes, flip the cakes and bake for another 1 – 2 minutes.

Enjoy
Wait for the cake to cool completely before enjoying. The milk puff pastry has a characteristic softness, and the filling is rich and quite melting due to the main ingredient being butter.

Finish and Enjoy
After the cake is done, take it out and let it cool completely on a rack.
The milk puff pastry can be eaten right away while warm or stored in an airtight container for later.
This cake will have a crispy texture, fragrant with milk and butter, making it perfect for a snack or to enjoy with tea.
