Prepare and Marinate the Meat
When you buy pork belly, rub it with salt, then rinse it with clean water.
Boil 1 pot of water for about 1 minute until the water boils vigorously, then add the meat, blanching it in high heat for about 3 minutes before removing the meat and rinsing it again with clean water.
How to Eliminate the Smell of Pork Belly
- To remove the unpleasant smell of pork, before cooking, you should blanch the pork in boiling water for about 3 minutes along with 1 crushed shallot; the shallot will help eliminate the smell very effectively.
- Additionally, white wine is very effective in removing the smell of meat. Just add a little white wine to the boiling water before removing the meat.
- Then, rinse the meat with cold water and continue with the cooking process; the meat will no longer have any unpleasant smell, and dishes made from pork will be more fragrant.
After rinsing the meat with clean water, cut it into bite-sized pieces, about 1/2 finger length, and place it in a large bowl.

Braised meat
Add sugar to the pot with 1 tablespoon of water to caramelize the sugar for coloring.
